Join us for an enlightening presentation as Carrie Kirkland and Maria Denicola give an overview of the healthcare industry as well as foodservice challenges and solutions addressing labor, cost management, and ways to optimize customer experience.

Carrie Kirkland, RD
Gordon Food Service Healthcare Customer Development Specialist
Carrie Kirkland is a registered dietitian. Carrie earned her Bachelor’s Degree in Dietetics from the University of Kentucky in the state where she was born and raised. She served as a board member on both the Kentucky Academy of Nutrition and Dietetics and Louisville Academy of Nutrition and Dietetics for 4 years. She currently works as a Healthcare Customer Development Specialist for Gordon Food Service in the Austin and San Antonio area.
Previously, she worked as a bariatric dietitian providing nutrition counseling to patients pre- and post- bariatric surgery for 3 years. In her current role, Carrie combines her healthcare background as a registered dietitian with sales to work with healthcare customers to manage food costs, elevate the dining experience, and provide educational in-services to dining staff. Carrie is new to Texas, living in Austin for the last 1 ½ years and loves exploring her new city and all the great food establishments it has to offer!
Maria Denicola, MS, RD, LD
Gordon Food Service Non-Commercial Business Solutions Specialist
Maria DeNicola is a Registered & Licensed Dietitian/Nutritionist and holds a Masters in Health Care Administration. She has enjoyed 42 years working in the health care food & nutrition services industry in a number of leadership roles including: 30+ years as a Director of Food and Nutrition Services in acute care and senior living, Consultant in food management and kitchen design, Sales of nutritional products, home IV therapies and equipment for meal assembly and delivery, and currently as a business solutions specialist for Gordon Food Service.
In her current role she assists customers to achieve best practices within their operations and
dining services programs and supports sales training as a subject matter expert in food and
nutrition services.
Learning Objectives:
● Learners will state current healthcare industry workforce trends, labor challenges with recruitment and retention, COVID concerns, food & nutrition service challenges and supply chain pain caused from the pandemic and other factors.
● Learners will describe solutions that operators have implemented to address the healthcare challenges being faced while enhancing the quality of care and service experience for patients and residents.
● Learners will describe how the use of technological advancements and robotics have been accelerated by the challenges being faced in the healthcare and food service industry.
